GFX100S is good but I am afraid its high resolution may become a drawback for using old manual lens on it.

I actually think you can test the limit of the old lens and bring out the characteristic of it. Bear in mind this is a medium format even modern full frame lenses would have problem on show, but this is the fun of it isn't it?
