It strikes me that a lot of these landscape shots are in very high contrast situations.I wonder how c-hing is dealing with the details in the shadows?

Good observation ... most of the time taking landscape pictures are under not so ideal light condition. I normally expose to the bright area, i.e. measuring the light value at the bright spot, then +1/3 to 1/2 stop to take the picture. Post processing using Lightroom to bright back the shadow details & tone down the the brightarea.
